Carnaroli rice risotto with Good King Henry from our meadows, goat milk ricotta from Maso Ciores farm, lake trout caviar and red onion chips

The recipe, born from the collaboration of Nicola Laera, Michelin-starred chef at La Stüa de Michil - Hotel La Perla (Corvara) and Elena Casiraghi, Ph.D. nutrition and sport integration specialist, was created to satisfy any cyclist’s hunger after a hard day’s riding, relying on the best local ingredients.

INGREDIENTS

• rice, a gluten-free carbohydrate that helps recover energy (glycogen)
• goat's cheese from Lüch Ciores (La Val) farm, a source of protein that helps muscle recovery
• lake trout caviar which adds flavour to the dish
• red onion chips and mountain spinach, which are rich in polyphenols and plant nitrates
